Grains of Paradise are the dried seeds of Aframomum melegueta, a West African spice prized for its lively peppery heat and citrusy lift. When freshly cracked, the seeds release warm notes reminiscent of cardamom and coriander, with a subtle floral edge. They can be used anywhere black pepper is used, while adding extra complexity to rubs, pickles, grilled foods, infusions, cocktails and craft brews.
