Alfalfa (Medicago sativa), also known as Lucerne, is a fine, golden coloured, quick sprouting seed and probably the most well known of the sprouts. It produces a deep green leaf that has a crisp mild flavour and contains great nutritional properties. Add to salads, smoothies, sandwiches, as a garnish or simply enjoy on its own.

Alfalfa sprouts are one of the most significant dietary sources of phytoestrogens, which have been reported to be beneficial in the fight against heart disease, cancer and osteoporosis.
