Horseradish Root (Armoracia rusticana) Dried is a pungent, warming kitchen staple with a long history in traditional herbal use. In food it adds bright heat to sauces, pickles and condiments. How to use

I am a chef and hoped to use it to flavour sauces etc in cooking. I tried rehydrating it in hot water and cold water and grinding it to a fine powder.
The taste is nothing like fresh horseradish and has a very bitter unpleasant taste with no flavour
I couldn’t find any fresh horseradish at our local markets cause it wasn’t in season. I like to make fire cider and keep a batch going all year round. I decided to give this gem a try and it worked like a bomb. This will definitely be a staple in my apothecary cupboard forever. Fanta stuff.
