Refresh tea blends, skincare and even sauces with this lemony-sour botanical. Native to Europe and Asia, sheep sorrel is a low-growing, tangy herb traditionally used in soups, stews, and green sauces. In folk medicine it was prized as a “cooling” herb, valued for its refreshing acidity and role in traditional blood-cleansing practices. You may also recognise it from the classic Essiac formula - a blend of burdock root, slippery elm, sheep sorrel and rhubarb - believed to support vitality, boost the immune system and reduce inflammation.
♡ Why we love it: While deliciously tart in soups, salads, sauces, vinegars and even as a curdling agent in cheese making, sheep sorrel is also bursting with natural acids like oxalic (which gives it its tangy kick), malic and citric, plus phenols and tannins for astringency and antioxidants. It’s a noted source of potassium, calcium, magnesium and trace elements - all carried with a refreshingly tart, lemony flavour and astringent aftertaste. As a tea
Infusion: 1-2 teaspoons of herb in 1 cup of boiling water. Infuse for 10-15 minutes. Strain. Drink 2-3 times per day.
Can also be drunk cold to assist with lowering fevers.
