Chia seeds contain many nutrients, carbohydrates and fiber and also contain antioxidants and omega-3 fatty acids and are considered a 'superfood' by many. The sprouts are ready to harvest when they are about 4cm long, which should be in 4-7 days. Allow to air dry before harvesting and enjoy as a micro green or as a sprout in salads and dips.
